Hope everyone enjoyed their 4th of July! Today's recipe is the perfect side dish at any barbecue - it is Cheesy Corn on the Cob. The recipe came from a friend and I am not sure where she originally got it from.
Ingredients Needed:
6 ears of corn
1 stick of butter, softened
1 teaspoon Roasted Garlic Chili Powder
Full packet of powdered cheese from Kraft Mac and Cheese
Preheat your grill (or oven) to 400 degrees F
Shuck your corn, removing the silk and husks. Then, in a bowl mix the softened butter, garlic chili powder, and the cheese packet from the macaroni and cheese box.
Then spread the butter mixture on the ears of corn until well coated.
Next, wrap the corn in foil.
Place on the grill and cook for about 30 minutes, turning them every 5 minutes to prevent burning. When done, remove foil and serve.
You can adjust the amount of heat by adding more or less chili powder. Also, since my soon to arrive little girl isn't allowing me to eat anything spicy I took half of the butter and cheese mixture and added Weber Roasted Garlic and Herb seasoning instead of the chili garlic powder and spread that on some of the corn. YUMMY!
