Recipe Monday - Pepperoni Pasta Salad

Today's recipe is one my older son came up with a couple of summers ago.  He likes to help in the kitchen and cook.   Of course, he wanted to make something with pasta.  Here is his take on pasta salad - Pepperoni Pasta Salad.

Ingredients Needed: 
One Box of Pasta (we used Rigatoni)
Pepperoni 
Shredded Mozzarella Cheese (we used 1/2 of an 8oz bag)
Kraft Italian Roasted Red Pepper Salad Dressing

 
First, cook your pasta according to directions on the box.  After the pasta is cooked drain it  and let it cool.  If you are in a rush for time you can run cold water over it or soak it in an ice bath.   Next, cut your pepperoni into quarters.  How much to add is up to your taste- my boys love pepperoni so they wanted a lot!


Then, add the pasta, pepperoni, and mozzarella cheese to a bowl.  The next ingredient is the dressing.  This is what really makes the dish - we use this dressing for a lot of dishes!  Again how much to add is up to you.  For a one pound box of pasta I used about 1/2 the bottle. 


Next, stir all the ingredients together.  At this point I usually chill it in the refrigerator for about an hour before serving.  Then enjoy!
